spinach lasagna


ingredients:
  • 1/2 package lasagna noodles
  • 2 26 oz spaghetti sauce
  • 1 15-16 oz ricotta cheese, (it calls for 16 but i can only find 15, but it works fine.)
  • 1 10 oz frozen chopped spinach
  • 1 lb shredded mozzerella
  • 1/2 c shredded parmesan
  • 2 eggs beaten, (eggs, i know it's weird)
  • chopped parsley
instructions:
  1. combine ricotta, spinach, half the mozzerella, parmesan, eggs, and parsley.
  2. in a 13x9 pan, layer 2 c sauce.
  3. then half of the noodles.
  4. half of the remaining sauce.
  5. add spinach mixture.
  6. sprinkle on half remaining mozzerella.
  7. now layer rest noodles and cover with remaining sauce.
  8. cover with foil.
  9. bake at 350 degrees for 45 min - 1 hr.
  10. uncover, put on the rest of the mozzerella and bake for another 15 minutes.
